Country Morning Breakfast Bake

1/2 lb sausages (1 pkg of frozen pre-cooked is good)
1/2 lb sliced bacon
2 cups shredded old cheddar cheese
1/2 cup finely chopped onion
2 cups tea buiscuit mix
1/4 cup corn meal
6 large eggs
1 small can apple sauce
1-1/2 tsp crushed thyme
1/2 tsp pepper

Precook sausages by simmering in water until done.  Prick
casing to reduce fat.  Drain and chop.  Precook bacon until crispy, drain excess fat.  Crumble.

In a 9" by 13" pan, layer sausage with 1-1/2 cups shredded

Top with onion and bacon.

In a mixing bowl whisk together tea biscuit mix, cornmeal,
apple sauce, eggs and seasonings.   Pour over mixture in
casserole.  Bake in a 350 degree oven for one hour until top is golden and firm.

Makes 8 servings.
